Lip-smacking fare

TV has changed the eating habits in many homes. With these simple yet tasty recipes, you can enjoy a substantial meal while watching your favourite programmes. They can be prepared beforehand and warmed up before serving.

Hard-boiled eggs with green chutney

Ingredients

Boiled potatoes: 5-6
Boiled eggs: 4
Salt, pepper powder, butter: to taste
Bread crumbs: ¾ cup

Method

For green chutney:

Take grated coconut ½ cup, washed and chopped coriander leaves, and add ¾ cup cashew nuts, four to five green chillies, and four garlic pods, along with a little jeera and1/4-tsp sugar. Add salt to taste and a little lemon juice. Grind the above ingredients to a smooth paste. The green chutney is ready.

Beat an egg well and keep it aside. Then mash the potatoes with butter, salt and pepper powder. Mix well and keep it aside. Cut the hard-boiled eggs lengthwise. Spread the green chutney over the cut side of the egg. Cover the sliced eggs with mashed potatoes and shape them well. Dip these into the beaten egg. Coat it with breadcrumbs and deep fry in oil. Serve hot.

Mixed vegetables with moong sprouts or kabuli channa

Ingredients

Cucumber, snake gourd, carrot, beans, and cabbage: 2 cups (cut into small cubes)
Sprouts or kabuli channa: ¾ cup
Salt: to taste
Grated coconut: ½ cup

Method

Soak the channa overnight with a pinch of soda bi-carbonate and cook it in a pressure pan. If water is in excess, cook till it is absorbed. For the moong sprouts: sprinkle a little water and cook. At the time of serving, heat a kadai and put all the washed and drained vegetables. Add a little salt and mix well. Close with a lid and cook for a minute or two. Do not overdo. Add the sprouts or the channa and mix well. Then sprinkle the grated coconut over it and serve hot.

Lamb chops

Ingredients

Lamb chops: ½ kg
Red chillies: 10
Ginger, garlic paste: 2 tsp
Big onions: 2 (cut into cubes)
Capsicum: 2 (diced)
Worcestershire sauce: 2 tsp
Soya sauce: 1tbsp
Salt: to taste
Pepper: ½ tsp
Oil: 2 tbsp
Hot water: 5 tbsp
Oil: for marination 1-1/2 tbsp
Boiled vegetables: for decoration

Method

Blend all the ingredients except the boiled vegetables, chops and capsicum in a mixer till it turns into a smooth paste. Wash the meat and drain well. Smear the meat with the ground paste and set aside for four hours. Heat oil in a frying pan and add the lamb chops. Fry both sides on medium heat till golden brown. Sprinkle hot water over the chops. Cover with a lid and cook on a slow flame for 25-30 minutes. Add onion cubes and capsicum and mix well. Place the cooked lamb chops in the centre of a serving plate and decorate with the boiled vegetables.

Caramelised banana with vanilla ice cream

Ingredients

Vanilla ice cream: 1 family pack
Banana: 4 or 5
Sugar: for caramelising ¾- cup
Hot water: 1 cup
Cardamom powder: 2 pinches

Method

Slice the banana into ¾ inch thickness. Take a pressure pan and put the sugar in to it. Heat this on slow fire till the sugar becomes golden brown. Stir with a steel spoon and pour hot water over the caramelised sugar and continue stirring. Add the sliced banana and cook till the water turns into a honey-like consistency. Sprinkle cardamom powder and keep aside to cool. Take two scoops of vanilla ice cream, each and decorate with three or four banana slices. Pour the syrup over the ice cream and serve chilled.
