French fries

When I make French fries they become brown and soggy. How does one make them crisp?

IT IS very easy to make potato chips (French fries). You need old potatoes and not new ones. Because chips made from new ones will turn brown and soggy. Peel and cut potatoes. Put them in cold water. Add some vinegar and salt and keep on gas only till the first boil. Remove from gas immediately and drain water. Fry chips in hot oil till crisp golden brown. Before frying, put chips on dry cloth to remove excess water.
