The Shashlik delight
One might wonder why the people from the breakaway republic of former USSR, Georgia, are so huge and how that their average survival age is over 80 years? Food and climate is the answer. And to prove the food part of the answer, Hotel Grand Bay has launched an exclusive ethnic Georgian cuisine festival called `Shashlik' at their multi-cuisine restaurant, The Residency, from Friday.
Shashlik originally is a nomadic cuisine very true to the climate and the life-style of rural Georgia. "The cuisine originated from the Georgian mountains in the Caucasus region but today finds its place among the best dishes globally. Being nomadic in character the base material is lamb meat that is barbequed and grilled. But the lavish use of different variety of sauces, green pepper, capsicum and other vegetables suggests the Mediterranean influence in almost every dish due to the regions close proximity to the Caucasus," says the Executive Chef of the hotel, Nambi Aarooran.
No Central Asian cuisine is complete without the use of vodka and rice. Even the meat is marinated in vodka. "Every dish is served with rice or bread crumbs and each shashlik is a self contained meal by itself. But to suit the local climate and taste we have designed shashliks using chicken, bacon and fish in the non-vegetarian section and have also spread an array of vegetarian shashliks using items like cheese, paneer and pumpkin," says he.
The globally popular cuisine would include dishes like Marush magic, Tuber Deccani, traditional cottage cheese shashlik, traditional lamb shashlik and sizzling charcutiere.
The festival will be on till July 27.
