Back Hotels urged to go in for bamboo-based recipes

THE National Commission on Bamboo Applications (NBMA) has initiated a move to promote the use of processed bamboo shoots in various cuisines in hotels. The move is part of its efforts to develop the agro-based economy of the North-East and many other States where bamboo is grown and bamboo shoots are part of the traditional cuisine.

The commission has said that bamboo shoots have a high nutritious value and low fat and are a good source of fibre. It has urged the Union Ministry of Tourism to advise the Indian Tourism Development Corporation (ITDC) to organise Bamboo Shoot Cuisine Festivals across cities for popularising the intake of bamboo shoot-based food recipes in dried, shredded and pickled forms.
